Lautering is a simple gravity filtration in which the
husks of the malted barley, which we purposely kept loose
and fluffy by careful milling, act as a porous filter
bed. Our lauter tun is quite wide in order to give a less
deep filtration. The wort (a German term for unfermented
beer) is filtered through the husks and comes out at the
bottom of the lauter tun. The spent grain is picked up
several times a week by a local dairy farmer.
