The wort is pumped from the lauter tun through the grant—a
copper trough with a set of eight adjustable spigots—and
then flows by gravity into the brewkettle. The grant holds
about a barrel of beer (31 gallons) at any one time. The
foam you see here is a result of the high protein content
of an all-malt wort.
