Once the wort has filled the brewkettle, which takes several
hours, it is boiled for about 90 minutes at a very vigorous
rate. During the boil, blends of fresh whole hops are
added at several stages according to each beer's recipe.
Boiling extracts the oils and bittering properties from
the hops, adding complexity to the taste and aroma of
the finished product. As it boils, the wort is sterilized
and concentrated so that at the strike, or end of the
boil, the wort has a higher sugar level.
