This is an Anchor Steam Beer fermenter, into
which we have pumped cooled wort and "pitched"
a fine bottom-fermenting yeast (meaning it settles down
and is collected from the bottom of each fermenting tank).
The fermentation of Anchor Steam takes place in
our unusually shallow, very wide, open fermenting pans,
made of stainless steel and cooled entirely by filtered
air moving through the fermenting room. Most of the time
we can use the naturally cool air from San Francisco's
foggy coastal climate.
