Bottling, although it never adds anything to a
beer, is terribly important. Perfection must be the goal
in order to maintain both quality and consistency. We
began bottling in 1971, and our bottle shop still reminds
us of a gigantic hi-tech electric train, with a musical
rhythm all its own.
