From John in Cincinnati: Are all of Anchor’s beers fermented in open fermenters? Are your ales fermented any differently than your lagers?
Bob: Most of our products, whether ale or lager, are fermented in open fermenters. The open fermented ales– such as Liberty Ale, Anchor Porter, Old Foghorn Barleywine, and Christmas Ale– are treated a bit differently in that their fermenters are square and deep as opposed to the wide, shallow “coolship” lager fermenters that we use for Anchor Steam and California Lager. We also ferment our IPAs in tall cylindrical tanks with conical bottoms, like what you see in many other breweries.
